Healthy Summer Chili

OH.EM.GOODNESS.

It’s hot outside, but it’s cloudy and looking to storm over at our house, so I started thinking about dinner early today. Something along the lines of “comfort food” that is secretly healthy was what started coming to me, so I decided that tonight will be CHILI NIGHT!!!!  I wanted to share this awesome recipe with ya’ll because, let’s face it… dinner is sometimes the last thing you want to deal with (or even find the creativity to come up with), especially during the summer!! 

This chili is seriously TO DIE FOR, and yet there is NO ADDED SUGAR and is packed full of vibrant, satisfying flavor. For this weight-lifting junkie, that hits the mark for a great dinner, and I have a feeling that my kids are going to go nuts over this amazing meal. The best part? You can make it ahead of time in a crock pot!!

 INGREDIENTS:

 1 lb lean ground beef or ground turkey (if you use turkey, add 1 tsp. of olive oil)
1 onion, chopped
3 garlic cloves, finely chopped
1 green pepper, chopped
1 can kidney beans
1 C kernel corn, fresh, canned, or frozen
1 can tomato sauce (no added sugar and organic, if possible)
1 can chopped tomatoes
1 C beef broth
1 t black pepper
½ t turmeric
½ t cayenne pepper
¼ t salt
¼ t coriander
1 T basil
½ T Herbs de Provence (or Italian Seasoning if you don’t have any of that on hand)

DIRECTIONS:

Combine ground beef/turkey (and olive oil if using ground turkey), onion, garlic, and green pepper in a large pan and heat until beef/turkey is almost completely browned. Add kidney beans and corn, and continue to cook until meat is browned completely.

In a crock pot (or pot, depending on how long you’d like to simmer your chili), combine all ingredients (be sure to drain all of the canned items, except for the tomatoes). Put the lid on your chili and allow it to cook on low for 2-4 hours (or for as long as possible before dinner hits). If you can simmer for at least an hour, the flavor will set in A LOT better. J
