Spooky Paleo Stuffed Peppers

I LOVE Halloween, and my kids are getting to an age where they love it too! Last night, I decided it was time to whip up something holiday-related since we’re nearing the end of October, and BOY were these good (and sooooo easy)!!! Best of all, they are Paleo!

INGREDIENTS:

4 Orange or Yellow Bell Peppers
1 lb. Grass-Fed Ground Beef (85% lean or higher)
1 T Chopped Garlic
1/4 C Chopped Onions
2 T Olive Oil
1 tsp Famous Dave’s Burger and Steak Seasoning

INSTRUCTIONS:

Preheat your oven to 350 degrees. While your oven is heating up, saute your garlic and onions in the olive oil until they are just golden. Then, add your raw meat (grass fed – TRUST ME – this is going to taste SO MUCH BETTER with grass-fed beef). Sprinkle on your seasoning. Cook your meat all the way through, and then drain your meat using a paper towel on a glass plate. Set aside.

Wash your bell peppers, then open the top like you would if you were carving a pumpkin (go a little wider so you don’t accidentally get seeds all over the inside). Remove the tops of the bell peppers, then cut out whatever faces you like on the front (again, just like you would with a pumpkin).

Take your meat and evenly fill each of your bell peppers, then place your peppers on a cookie tray and place them in the oven for 20 minutes.

Remove and let them cool for 5 minutes. Enjoy!

*Note – technically, dairy isn’t advised on the Paleo list. However, our family is all about using low-fat cheeses to add extra flavor to some of our dishes, so don’t be afraid to put a slice of mozzarella or provolone cheese on top if you want. We did! 🙂 🙂
