Whoooooooaaaaaaaaaaa! This salad is AMAZING!!! My mom created this superb dish a few days ago, and I just had to share!
For those of you who are unfamiliar with Quinoa, let me introduce you to the protein-packed seed that is currently rocking our world. YES – PROTEIN! This seed counts as a smart carb and a protein, so it is a well-rounded piece that can fit into any part of your meal plan during the week. Additionally, the texture of this grain is lovely, especially when combined with the crunchiness of kale.
NOTE – In order to fully realize the awesomeness that is Quinoa, you should combine it with a serving of smart fat as well.
ENTER SWEET QUINOA AND KALE SALAD!
I’m telling you – I’m SALIVATING over this thing. I’ve eaten it for lunch 2 days in a row, and guess what? I’m up for round three today!!! 😀
Without further ado, The Sweet Quinoa and Kale Salad…
1 C red quinoa, rinsed and cooked (cook this in 2 cups of water and then drain)
1/4 chopped red pepper
1/4 chopped orange pepper
1/4 chopped green pepper
1/4 chopped yellow pepper
2/3 c slivered almonds
1/3 c dried cranberries
1/2 pound to 1 pound of kale
1 T Balsamic Vinegar
2 T Olive Oil
Combine all of the salad ingredients and toss in a large bowl. Set aside.
Combine two dressing ingredients, then combine with salad ingredients and toss.
OPTIONAL: You can toast the almonds if you feel so inclined, but I personally enjoy them raw. 🙂
